Whisky crafted in the Canadian tradition begins with locally sourced grains that undergo individual distillation, maturation, and blending. These spirits are then refined further through a unique finishing process in red wine casks sourced from our Wayne Gretzky winery. This meticulous method enhances the whisky with rich oak, vanilla, and spice flavors, resulting in a sophisticated and velvety smooth product.
The distinctive climate of Ontario plays a crucial role in the aging process. The significant temperature fluctuations experienced throughout the year in our non-temperature-controlled environment drive the whisky deep into the oak during warmer spells and coax it out during cooler periods. Additionally, factors such as the barrel’s placement within the rickhouse, including temperature, airflow, and elevation, influence its aging trajectory. This variability grants our distillers a wide array of blending options to tailor the taste profile according to Wayne’s preferences.
Upon pouring, the whisky reveals a bright straw gold hue with hints of ruby red. Swirling the glass releases inviting aromas of toasty new oak, almond, caramel, and vanilla, followed by subtler undertones of nutmeg spice and stone fruit. With the addition of a touch of water, notes of sweet spice and dark raisin emerge, enriching the sensory experience. The palate is greeted with a smooth, rounded texture, complemented by woody tannins that lend structure and deep flavors of toasted nuts and allspice. The finish is long-lasting, leaving a delicately sweet and smooth impression with lingering notes of nut and allspice.
