The aromatic profile reveals luscious notes of rich cassis, black forest cake, toasted oak, with a subtle interplay of leather and spice. On the palate, the wine showcases a full-bodied experience, accentuated by flavors of dark cherries, cassis, and an underlying presence of toast and spice. The tannins are approachable, and the wine culminates in a lingering and satisfying finish.
To craft this wine, the grapes underwent a gentle destemming and crushing process, followed by a 14-day fermentation in stainless steel tanks. Throughout this period, the wine was meticulously pumped over twice daily, facilitating the extraction of flavors and colors. After pressing off the skins, the wine underwent malolactic fermentation in a carefully selected combination of French and American oak barrels. The aging process took place over 15 months in these barrels, allowing the tannins to soften and the flavors to intensify and harmonize.
