The champagne boasts fine, persistent bubbles and a fresh bouquet with delightful notes of white flowers and ripe fruit, accompanied by hints of peaches and dried apricots. It offers a fresh and semi-dry palate dominated by flavors of raisins and preserved fruits, leading to a lingering, soft, and sweet finish. Comprising 40% Chardonnay and 60% Pinot Noir/Pinot Meunier, this champagne pairs excellently with desserts, wreath cake, and foie gras. Taittinger crafts their Nocturne Sec quality annually, blending around 30 different crus from various vintages. The finished cuvée undergoes fermentation and aging for at least 4 years. Following this process, the wine is "completely dry," and to achieve its "Sec" classification, a sweet liqueur made from Champagne and cane sugar is added (17.5 grams of cane sugar per liter), a step known as "dosage" in French. Founded in 1734, Champagne Taittinger stands as the 3rd oldest Champagne house still in existence, under the ownership and management of the Taittinger family.
