Established in 1985 by James and Suzanne Halliday, Coldstream Hills has flourished into one of Australia’s premier boutique wineries, renowned for its excellence and accolades. Nestled in the picturesque Yarra Valley east of Melbourne, its steeply planted vineyards have become synonymous with the region, as have its wines, which epitomize regional character, consistency, and sophistication. Handpicked from select vineyards in the Lower and Upper Yarra Valley, the fruit undergoes meticulous selection before reaching the winery. While the Lower Yarra contributes dark cherry nuances and structural depth, the Upper Yarra imparts elegance, spice, and aromatic complexity. Employing a range of handling and fermentation methods, including whole bunch fermentation, the wine is then aged in a combination of seasoned and new oak barrels for eight to nine months before blending and bottling, resulting in a harmonious expression of Yarra Valley terroir.
