Crafted in the highlands of Oaxaca, Alipús San Baltazar Mezcal is a true expression of artisanal mezcal-making. Produced in San Baltazar Guelavila, this mezcal is made from 100% Espadín agave, grown at high altitudes where the climate enriches the plant’s natural sugars.
Slowly roasted in underground earthen pits, naturally fermented with wild yeasts, and double-distilled in copper stills, the result is a mezcal with remarkable character. On the nose, it offers earthy aromas with hints of citrus and light smoke. The palate delivers a beautifully balanced profile—soft herbal notes, minerality, and a clean smokiness that lingers with elegance.
